The orange-red color of gojiberry Carotenoid (which is why the Carotenoid dissolved in water to produce orange-red color after soaking in water) . The content of gojiberry is 0.03% ~ 0.5% of the dried fruit. There are 11 kinds of free Carotenoid and 7 kinds of Carotenoid in Chinese gojiberry.
Free Carotenoid include beta-carotene, beta-cryptoxanthin and zeaxanthin. The Carotenoid fatty acid esters were mainly zeaxanthin palmitic acid, zeaxanthin palmitic acid and β-cryptoxanthin palmitic acid. The major Carotenoid is zeaxanthin in esterified form, which accounts for one-third to one-half of the total Carotenoid. The contents of total carotene in dried and fresh gojiberry L. were 168MG/100g and 173MG/100g, respectively.
